Beer Braised Pork, Waffle Cut Fries with Cheese Sauce, also known as the most epic spin on nachos ever.
This is totally a copycat recipe from a restaurant we use to frequent in San Francisco called Rickybobby. Yes it was actually called Rickybobby and this just had to be on the menu for The Daytona 500. Along with Spicy Whiskey Sliders. Because NASCAR and ‘merica.
This recipe contains layers of flavor but so easy to put together for a crowd and you’ll watch it all disappear before your eyes. I know this seems super decadent and you’d be right. It is, but once a year we can get down on some decadence.
I braise the pork ahead of time in the crock pot and use Alexia Waffle Cut Fries. They’re already seasoned and easy to bake in the oven then assemble the fries. Think of these like nachos but better.
Pork Fries
Think of these like nachos. It's layered together with low and slow cooked pork, homemade nacho cheese sauce and instead of chips, it's waffle fries. Serve at your next sports party!
Ingredients
- For Beer Braised Pork
- 2 pound Pork Shoulder
- 1 {12 ounce} bottle Beer, {I used an Amber}
- 1 teaspoon Liquid Smoke
- Kosher Salt and Pepper, to season
- For Cheese Sauce
- 2 tablespoons Butter
- 2 tablespoons Flour
- 1 cup Whole Milk
- 1 cup Cheddar Cheese, grated
- 1/8 teaspoon Cayenne Pepper
- 1/4 teaspoon Kosher Salt
- Pork Fry Assembly
- 2 bags Alexia Seasoned Waffle Cut Fries, baked according to instructions
- Frank's Buffalo Hot Sauce
- Green Onion, chopped for garnish
Directions
- Step 1 In a crockpot, place the pork shoulder and season with salt and pepper on all sides. Pour in the beer and liquid smoke. Cook on low for 6-8 hours until fork tender. Shred in the liquid and keep on warm until ready to assemble pork fries.
- Step 2 In a medium sized pan heat butter over medium heat and add flour. Whisk together for 2 minutes until combined and roux looks golden. Slowly whisk in milk and turn heat down to a simmer until sauce looks thickened. Add in cheddar cheese and whisk until melted. Season with cayenne and kosher salt. Keep warm until ready to assemble. Whisk before serving and add a touch of extra milk if it needs to be thinned out.
- Step 3 On a large serving tray layer your waffle cut fries first. Top with braised shredded pork, drizzle on the cheese sauce, drizzle on the buffalo sauce to your liking and garnish with green onion. Serve immediately. Enjoy!
