Loaded Cheese Fries has it all; avocado, pickled red onions, spiced fries, jalapenos, cilantro, topped with a delicious cheese sauce. It’s the ultimate party food that will disappear the minute you put it down. These fries are addictively good. 

We use to get cheese fries like this at a dive bar in San Francisco. After a night of drinking, this was the surest and quickest way to forget that hangover.

Loaded Cheese Fries

Think of these cheese fries like nachos on steroids. I love making nachos with alternatives like tater tots or french fries. I love the spiced fries, I could just take a big plate of those by themselves.

I use frozen Alexia House Cut Fries with Sea Salt in this recipe, I love all their products. I’ve used their waffle cut fries before for a similar recipe and they are so good. Make your own pickled red onions for an added fresh, tangy crunch, recipe here. Add shredded pork, grilled chicken or cooked ground beef for an added protein. I’ve also opted for topping with homemade guacamole and sour cream too.

Ingredients
  • 1 bag {28 ounces} Alexia House Cut Fries with Sea Salt
  • 1 teaspoon each Garlic Powder, Onion Powder, Kosher Salt, Smoked Paprika, and Chili Powder
  • For Cheese Sauce
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1 cup Whole Milk
  • 1 cup Cheddar Cheese, grated
  • 1 cup Monterey Jack Cheese, grated
  • 1/8 teaspoon Cayenne Pepper
  • 1/4 teaspoon Kosher Salt
  • For Toppings
  • Pickled Onions
  • Avocado, sliced
  • Queso Fresco Cheese, crumbled
  • Jalapenos, seeds removed and sliced
  • Cilantro Leaves
Directions
  • Step 1 Preheat your oven to 425 degrees F.
  • Step 2 Place fries in a single layer on a sheet pan. Combine garlic powder, onion powder, kosher salt, smoked paprika and chili powder in a bowl. Sprinkle spice mix over the fries and toss to coat.
  • Step 3 Bake for 20 minutes, flipping half way through to ensure maximum crispiness. While the fries are baking make the cheese sauce.
  • Step 4 In a medium sized saucepan heat butter over medium heat and add flour. Whisk together for 2 minutes until combined and roux looks golden. Slowly whisk in milk and turn heat down to a simmer until sauce is thickened. Add in cheddar cheese and monterey jack cheese, whisk until melted. Season with cayenne and kosher salt. Keep warm until ready to assemble. Whisk before serving and add a touch of extra milk if it needs to be thinned out.
  • Step 5 Remove fries from the oven and place on a large serving platter. Drizzle with cheese sauce to coat fries. Top with pickled onions, avocado slices, crumbled queso, sliced jalapenos and cilantro. Serve immediately and enjoy!
