Asian Miso Garlic Parmesan Wings are the upgraded version of those tired parmesan garlic wings. Turn up the flavor with a boost of miso paste, mirin, and soy sauce. It’s an explosion of delicious, savory, and umami flavors. 

These wings are crazy addictive. You have been warned. 

I’ve got to be honest, I originally intended this sauce to be for a noodle recipe, but I had wings in the fridge and football was about to start so I decided to take a left turn and toss some crispy baked wings in this sauce instead.

You heard that right, CRISPY baked wings. It is possible. Baking powder is the solution. Not to be mistaken with baking soda, I repeat DO NOT use baking soda on your wings!

Baking powder is a leavening agent for baked goods, it’s a combination of bicarbonate sodium, cream of tartar and cornstarch. When mixed with salt and lightly coated on the chicken, it dries out the skin and crisps it up it bakes.

 This sauce is so simple and doesn’t take many ingredients to make it great. Because you get a lot of salt and umami flavors from the miso paste and soy sauce it doesn’t take much seasoning. That and a handful of garlic, I mean can it really be bad!?

The answer is no.

Ingredients
  • 2 pounds Chicken Wings
  • 4 teaspoons Baking Powder
  • 1 teaspoon Kosher Salt
  • 1 stick {1/2 cup} Unsalted Butter
  • 5 cloves Garlic, minced
  • 1 tablespoon Miso Paste
  • 1 tablespoon Mirin Cooking Wine
  • 1 tablespoon Soy Sauce
  • 1/2 cup Grated Parmesan
  • Chives, chopped for garnish
  • Toasted Sesame Seeds and Black Sesame Seeds, for garnish
Directions
  • Step 1 Preheat oven to 400 degrees F.
  • Step 2 Pat chicken wings dry with a paper towel. Add the chicken wings to a large bowl, sprinkle the baking powder and kosher salt over the top, use tongs to toss to coat the chicken wings. This is a light coating, it does not need to be saturated.
  • Step 3 Evenly space chicken wings on a sheet pan lined with a baking sheet. Bake in the preheated oven for 40 minutes.
  • Step 4 While the wings are baking, make your sauce. In a sauce pot melt butter over medium heat. Add your garlic and stir until fragrant, about 30 seconds. Over low heat, whisk in miso paste, mirin, and soy sauce. Stir until combined and slightly thickened. Remove from heat and set aside until wings are down.
  • Step 5 Remove baked wings to a bowl and drizzle sauce over the top. Toss the wings with tongs in the sauce to coat evenly. Toss in grated parmesan, chopped chives and toasted sesame seeds. Serve immediately and enjoy!
