I’m constantly looking for healthier alternatives to pasta. I’m a pasta fanatic, but it’s definitely not something I can eat every night of the week. As much as I’d like to. Modern Meals is absolutely delicious and just feels like you’re doing good for your body. I’m always hesitant to try any sort of lentil or quinoa pasta, all of them kind of taste the same to me and fall apart when cooking {like mushy cardboard} but I was so shocked to find that this lentil pasta is so yummy and also holds it shape! Major bonus that they come in all sorts of flavors and recipes. The parmesan pesto pasta was absolutely delicious.

I’m all about the garnishes here. I love using micro arugula and pea shoots to adorn this pretty meal.

Wine Pairing Recommendation: Pesto and Sauvignon Blanc go together like PB&J. The crispness and citrus in the wine pairs perfectly with the basil and lemon in the pesto. Pour a chilled glass and enjoy!

The pea pesto makes about 1 cup. Store in an airtight container in your fridge for up to one week. Spoon over your mac and cheese and enjoy as needed.

Ingredients
  • 1 package Modern Table Three Cheese Lentil Penne
  • 2 tablespoon Unsalted Butter
  • 1/4 cup Milk
  • 1 cup Green Peas
  • 1 packed cup Basil
  • 1 clove Garlic
  • 1/4 teaspoon Kosher Salt
  • 1 teaspoon Lemon Juice
  • 1/3 cup Extra Virgin Olive Oil
  • Golden Pea Shoots, for garnish
  • Micro Arugula, for garnish
Directions
  • Step 1 Cook Modern Table Three Cheese Lentil Penne according to the directions on the package. Drain well, return pasta to the pot, and stir in butter, milk and cheese sauce until combined. Let stand for 2 minutes while you make the pea pesto.
  • Step 2 Add peas, basil, garlic, kosher salt, and lemon juice to your food processor. Pulse a few times until everything is coarsely chopped. While the food processor is running slowly drizzle in olive oil until the pesto is smooth. Scrap the sides with a spatula and pulse to make sure everything gets incorporated.
  • Step 3 Spoon pea pesto on top of mac and cheese. Garnish with pea shoots and micro arugula. Serve and enjoy!
