Look at these little cuties! I haven’t done much baking in the last few months but some very ripe bananas were calling to me so here’s the fruits of my labor…..get it? I made these as a New Year’s Eve treat accompanied by lots of good champagne and great friends. There is no better way to ring in the new year than that.

So since I haven’t done much ‘Sweet’ posting in a very very veeerrrryy long time, it only seems fitting for new years to make a resolution to add a little more sweet to my savory site. Afterall my original slogan for my site was Dash of Savory, Pinch of Sweet.

I dropped the sweet when I realized it really was just a pinch.

So after polishing these off I decided what better way to start the new year than with a diet? Well the diet lasted a day and now I’ve changed that resolution to making a better effort to balance my diet with moderation…..After all, “Everything in moderation, including moderation.”

Ingredients
  • 2 whole Eggs
  • 1 stick Butter, softened
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 – 3 whole Bananas, very ripe, peeled and mashed
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 2 cups Flour
  • Mini Chocolate Chips, for garnish
  • For the Frosting
  • 8 ounces Cream Cheese, softened
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Heavy Whipping Cream
Directions
  • Step 1 Preheat your oven to 350 degrees F. Spray your mini cupcake pan with nonstick cooking spray.
  • Step 2 In a large mixing bowl or in your stand mixer combine eggs, room temperature butter, granulated suger, brown sugar, bananas and vanilla extract. Mix until well combined. Add the salt, baking soda, baking powder and slowly incorporate flour until just combined.
  • Step 3 Spoon about a tablespoon of batter into the prepared cupcake tins. Bake for 15 minutes. Remove cupcakes from the pan and allow to cool on baking racks for a few minutes before frosting. Repeat with remaining batter.
  • Step 4 Meanwhile, make the cream cheese frosting. Mix together the cream cheese, powdered sugar, vanilla extract and heavy whipping cream. Mix until light and fluffy. Place frosting in a piping bag with star attachment. Frost the cupcakes to your liking and garnish with mini chocolate chips.

Preheat your oven to 350 degrees F.

Bake for 15 minutes. Remove cupcakes from the pan and allow to cool on baking racks for a few minutes before frosting. Repeat with remaining batter.

Meanwhile, make the cream cheese frosting.


Mini Banana Cupcakes

Mix together the cream cheese, powdered sugar, vanilla extract and heavy whipping cream. Mix until light and fluffy.


Mini Banana Cupcakes

Place frosting in a piping bag with star attachment.


Mini Banana Cupcakes

Frost the cupcakes to your liking and garnish with mini chocolate chips.
