I’ve been obsessed with kimchi lately. I’ve been putting it in fried rice, topping on avocado toast, stirring into ramen, and now mixing it in mac and cheese. It’s the spicy and tangy bite you need to add to anything and everything.

Kimchi has HUGE health benefits, it’s a Korean staple and consists of fermented napa cabbage and radishes and typically is spicy. Because it’s fermented it’s good for your “gut-health” bacteria. It aids in digestion and boosts your immune system. It’s also packed with Vitamin A and C.

So really, you’re being super healthy by eating mac and cheese.

Did I also mention this mac and cheese is gluten free?! So on top of mixing in an aided immune booster, you’re eating gluten free. You’re practically entitled to having another bowl.

I’m so in love with Modern Table Meals and their lentil mac and cheese. I’ve always said that gluten free pasta was a waste of time because it never tastes right and always falls apart. Kind of like mush. This is not the case with this brand. It’s absolutely delicious too. I would put this up against any boxed mac and cheese brand. Let’s call them “Kraft” or “Annie’s”. It’s a hundred times better and better for you.

Wine Pairing Recommendation: This spicy tangy cheesy dish needs a Pinot Blanc, great minerality and will be the perfect un-winder for this “healthful” meal.

Kimchi can be found in the refrigerator section in produce of your grocery store. It's usually right by the wonton wrappers.

Ingredients
  • 1 box Modern Table Classic Cheddar Mac and Cheese
  • 2 tablespoons Butter
  • 1/4 cup Milk
  • 1/2 cup Spicy Kimchi
  • Chopped Chives, for garnish
  • Black Sesame Seeds, for garnish
Directions
  • Step 1 Boil 2 quarts water in large pot. Stir in pasta. Reduce heat to medium-high. Cook for 8-9 minutes, stirring occasionally.
  • Step 2 Drain well and return pasta to pot. Stir in butter, milk and sauce mix until blended. Let stand 2 minutes. Stir in kimchi.
  • Step 3 Serve garnished with chopped chives and sesame seeds. Enjoy!
