Fluffy Champagne Pancakes

Fluffy Champagne Pancakes

Fluffy Champagne Pancakes are so fluffy I could cry. Of course I had to sneak in some champagne into these pretty cakes. It combines all brunch mimosa goals and the most perfect breakfast vibes.

I got to be honest with you guys, I’ve had one hell of a October. For many of you that don’t know my background I work a full time job as a Wine Representative. I’ve been doing this for 4 years and I love it. It was my calling after culinary school {at least it was after I figured out I was not going to be this great Food Network Michelin Star Chef}, but none the less it has been a great 4 years and I love what I do and the people I work with.

I couldn’t be happier that October is over and we’re on to my favorite time of the year {stretchy pants and eating yourself into a small nap coma}. Not to mention I took a whole week off to relax before the holidays, take a deep breath and center my chi…who am I kidding, I’m going take lots of naps and create beautiful recipes for you all.

So it’s my first day of vacay and I thought what better way to celebrate than with these fluffy fluffy fluffy champagne pancakes. Yes, I gave you 3 fluffies and it doesn’t even do it justice. The trick to good pancakes is always baking powder, it acts as a leavener and lets the pancakes rise a little while they cook. Champagne reacts with the baking powder and creates this light texture creating this super fluff.

Serve these fluffy beauties with strawberries and of course champagne. Which leads me into my wine pairing recommendation.

Wine Pairing Recommendation: You know what time it is, Champagne time, try a French sparkling. You don’t have to buy expensive bottle of champagne, you can find a great bottle for under $15. If you’re grocery store is limited, the champagne “loop hole” is Korbel. They’re the only California sparkling that’s allowed to be called champagne and for $12.99 I’ll drink that all day.
