Welp, I’m stuck on this Asian kick and there’s no stopping me. This Sticky Soy Grilled Chicken with Sesame Cucumber Salad makes my 5th meal in a row with some kind of Asian fusion inspiration. And I’m not mad about it.

Really, are there any flavors better in the world than Asian flavors?!

You could almost argue that all cultures and cuisines are derived from Asian culture.

Noodles, you better believe they were the first ones to do it. Sauces, they have a lock on sauces. Any delicious aromatic? {Garlic, leeks, onions, ginger, peppers?} Asian culture did it first.

So I present to you this absolutely divine Sticky Soy Grilled Chicken with a fresh and flavorful Sesame Cucumber Salad. And I served it all on top of a bed of cold rice noodles. What a way to create a delicious, healthy meal in under 30 minutes for your family. Bonus: Clean up is a snap!

Rice noodles are really easy to prepare and are gluten free. Boil water, remove from heat, and steep the noodles in the water for 10 minutes. Rinse with cold water and toss in some sesame oil and season with salt. Place in the fridge until ready to serve. If the rice noodles stick together just rinse with warm water before serving to unstick.

Sticky Soy Grilled Chicken with Sesame Cucumber Salad

Serve everything on a bed of cold rice noodles and your set with a delicious weeknight meal.


  • For Sticky Soy Chicken
  • 1/4 cup Brown Sugar
  • 1 tablespoon Sesame Oil
  • 1/2 cup Soy Sauce
  • 1 tablespoon Sambal Chili Garlic Paste
  • 1 pound Chicken Thighs, boneless and skinless
  • Green Onion, chopped for garnish
  • Toasted Sesame Seeds, for garnish
  • For Sesame Cucumber Salad
  • 2 whole Cucumbers, halved and thinly sliced
  • 2 tablespoons Rice Wine Vinegar
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Sugar
  • 2 teaspoons Soy Sauce
  • 1/2 teaspoon Kosher Salt
  • 1 teaspoon Toasted Sesame Seeds
  • 1 pinch Crushed Red Pepper Flake
  • Step 1 For Sticky Soy Grilled Chicken
  • Step 2 Combine all ingredients in a resealable plastic bag. Add chicken to bag and marinate chicken for up to an hour or overnight.
  • Step 3 Brush your grill with oil and preheat your grill to high heat about 450-500 degrees F.
  • Step 4 Remove chicken from marinade and discard. Grill chicken until outside is caramelized and cooked through about 5 minutes per side. I like to grill my chicken thighs until slightly charred on the edges. Remove to a pan and cover with foil. Allow to rest while you assemble salad.
  • Step 5 For Sesame Cucumber Salad
  • Step 6 Whisk together all ingredients except cucumbers in a bowl until sugar and salt is dissolved. Add cucumbers and toss together.
  • Step 7 Serve everything together on top of chilled rice noodles or white rice. Enjoy!
