Shrimp Scampi Fettuccine is just one of those comfort meals that feels healthy and refreshing. The tangy lemon and succulent shrimp makes you forget about all the butter and carbs in the dish.
I made fresh pasta for this dish because why not. I love fresh pasta for so many reasons. It’s tender, chewy, and flavorful. If you’ve never made fresh homemade pasta, you are missing out. You’ll be amazed by how delicious it is compared to dried pasta from the store! For your first time it may be time consuming and messy, but by the third time you’re a pro.

Shrimp Scampi is super quick to make; saute shrimp and garlic, deglaze with white wine and lemon juice, add butter, parmesan, and red pepper flake. Time! 15 minute process, at the most. If you’re not into making homemade pasta, grab fresh fettuccine from your deli refrigerated aisle in your local grocery store. Buitoni Fresh Fettuccine Noodles are my go to.
Wine Pairing Recommendation: You want something medium bodied with good acidity and fruit. This dish just screams for a white wine, try a Vermentino from Italy.
So cuddle up with a big bowl and a big glass of wine and pretend you’re being healthy!
Shrimp Scampi Fettucine
Use the cooking liquid to your benefit here. Whether you like a saucier scampi or not just eye ball the amount of liquid you put in. Garnish with plenty of parmesan, parsley and add a pinch or two of red pepper flake for more heat!
Ingredients
- 1 {9 ounce} package Buitoni Refrigerated Fettuccine or Homemade Pasta
- 2 tablespoons Olive Oil
- 1 pound Large Raw Shrimp, peeled deviened
- 5-6 cloves Garlic, minced
- 1 cup Dry White Wine, Chardonnay or Pinot Grigio
- 1/2 Lemon, zested and juiced
- 4 tablespoons Butter, cubed
Directions
- Step 1 Cook pasta according to recipe or directions, reserve about 1/2 cup of cooking liquid. Set aside.
- Step 2 Make sure to have all your prep ready and in front of you because this will go fast.
- Step 3 In a large saute pan, heat olive oil over medium high heat. Add shrimp and saute about 2 minutes until shrimp are turning pink. Add minced garlic to pan, saute with shrimp until fragrant, about 30 seconds.
- Step 4 Add in white wine and lemon zest and juice. Deglaze and turn heat down to simmer until shrimp are completely cooked through. Begin adding cubed butter and stir in to create a smooth and creamy sauce. Season with salt, pepper, and red pepper flake.
- Step 5 At this point turn off the heat and add pasta right into the pan. Toss in the pasta in the sauce and add parmesan cheese with reserved cooking liquid. Toss in parsley to mix.
- Step 6 Transfer to a serving dish and serve immediately with plenty of shredded parmesan cheese.
