Cheesy Garlic Bread is the ultimate comfort food. Really, how can warm bread and gooey cheese be a bad combination?

I know every food blogger has garlic bread on their site. They also all claim it’s the ‘cheesiest’, the ‘garlickiest’ {is that a word? Probably not.}, and the greatest. I get it, how can cheesy garlic bread be bad?!

But in all seriousness, and I’m saying this with a straight face. This is the best!

I’ve been making this recipe for over a decade all thanks to my now husband who made this for me on our first date. He made me pasta and cheesy bread and told me do not ask what’s in it, but it’s like crack. He was right and of course I had to ask.

The only reason I’ve kept this secret recipe from you all is in fear I’d be shunned from the foodie world. But this is too good not to share. Mayonnaise, yes, mayonnaise my dear friends. I can feel you judging me, but I had to get it off my chest. I will scream it from the rooftops. M-A-Y-O-N-N-A-I-S-E!

I’ve always had the “no judgy” kind of attitude when it comes to food. Everyone’s tastes are different and I can’t stand when someone yuck’s another persons yum. You’re not better than someone else if your prefer caviar or canned chicken. Just let people live and like what they like.

And eat the mayonnaise smothered cheesy bread.

Because it’s epically good and you only live once.

I love using Ciabatta for this recipe, but French Bread works great too.

Ingredients
  • 1 loaf Ciabatta, split lengthwise
  • 1 stick Butter, room temperature
  • 1/4 cup Mayonnaise
  • 2 cloves Garlic, finely minced
  • 1/2 teaspoon Kosher Salt
  • 2 tablespoons Parsley, chopped
  • 1 cup Cheddar Jack Cheese, shredded
  • 1 cup Low Moisture Part Skim Mozzarella, shredded.
Directions
  • Step 1 Preheat your oven to broil.
  • Step 2 In a small mixing bowl add room temperature butter, mayonnaise, garlic, kosher salt and chopped parsley. Mix with a fork to combine all ingredients.
  • Step 3 Place the two ciabatta halves on a sheet pan lined with foil. Using a spatula spread the butter mixture evenly on the two halves. Evenly coat with shredded cheddar and top with shredded mozzarella.
  • Step 4 Place on the middle rack of the oven and broil for 10-15 minutes until cheese is melted and bubbly. Keep an eye on it, because everyone’s broiler is different depending if you’re using gas or convection. Remove and cool slightly for a few minutes before slicing into 6 even pieces per half and serve. Enjoy!

One more cheese pull for good measure.
