Cheesy Waffled Hash Browns is the delicious breakfast side dish you need make. Every bite of perfectly crisp and cheesy hash browns. Make for a crowd and top with eggs and bacon for the perfect brunch.

You can use any shredded hash browns of your preference but I’m partial to Alexia’s Yukon Hash Browns. They’re so yummy and I think they make the best golden crispy hash brown.

I’m a big savory breakfast person and this dish is perfection. Easy to make and takes little time to prepare in the morning, especially on a lazy Sunday complete with mimosas. Top with eggs of your choice, bacon, parmesan cheese, any and every savory topping you can think of for breakfast. And I highly recommend you spice it up with some Sriracha. It’s not a complete breakfast without Sriracha.

 Top it the way you like it! I like it with sunny side up fried eggs, thick cut bacon, extra parmesan cheese, and garnished with chopped chives.

Serve with a sunny side up egg, some bacon, extra parmesan and a sprinkle of smoked paprika for a complete breakfast dish.

Ingredients
  • 1 bag {28 ounces} Shredded Hash Browns, thawed
  • 3 whole Eggs
  • 1/3 cup Milk
  • 1/2 cup Parmesan Cheese, plus more for garnish
  • 1/2 cup Cheddar Cheese
  • 1 tablespoon Chives, chopped
  • 1/2 teaspoon Kosher Salt and Ground Black Pepper
Directions
  • Step 1 Preheat your oven to 300 degrees F or on the warm setting.
  • Step 2 In a large bowl fold together hash browns, eggs, milk, cheese, chives and kosher salt and pepper.
  • Step 3 Preheat your waffle iron, if it has a ‘crispy outside’ setting, set it to that. Be sure to liberally spray your waffle iron with nonstick cooking spray before each batch.
  • Step 4 Use a cup measurement and work in batches, have a sheet pan handy to put the waffles in the oven to keep warm between each waffle.
  • Step 5 Evenly spread a cup of hash brown mixture in your waffle iron close and cook until waffle is crispy and browned, about 7-8 minutes depending on your waffle iron. Keep an eye on it to keep from burning. Keep waffles warm in your oven until ready to serve.
  • Step 6 Top waffles with eggs of your choice, protein of your choice, garnish with extra parmesan cheese and sprinkle with smoked paprika. Enjoy!
