Kimchi Ramen is savory, tangy, spicy and full of flavor. The perfect dish on these cold winter evenings. I used Mike’s Mighty Good Kimchi Ramen in this recipe and it is in no way sponsored or an ad, I just really love this product. I have to say for packaged ramen product, this one is my favorite. And I take my ramen very seriously.

This ramen is the real deal when it comes to packaged ramen. The broth flavor is absolutely delicious, rich and authentic. Their noodles are organic, made from scratch and steamed instead of fried. It’s so good you would think it came directly from a ramen shop.

I always spruce up my packages of ramen, ever since my early college days when I realized ramen didn’t have to be plain. I’ve been switching up the variations just based on what I have on hand. I add an egg, bean sprouts, spinach, bok choy, chili oil, green onions, or even kimchi.

Kimchi is a salted and fermented cabbage side dish that is from Korean culture. I love adding it to a lot of my Asian dishes as a topping. It’s tangy and spicy, it adds the perfect balanced flavor to anything, even mac and cheese! Kimchi is also good for your gut, it has healthy bacteria that is found in fermented products and is rich in vitamins A, B and C, with minerals like calcium and iron.

Ingredients
  • 2 packages {2.3 ounces} Mike's Mighty Good Vegetarian Kimchi Ramen
  • Toppings
  • 1/2 cup packed Fresh Spinach Leaves
  • 1/4 cup Kimchi, divided
  • 1 whole Boiled Egg {Boil for 6-8 minutes depending on the desired yolk}, cut in half
  • 3 stems Green Onions, chopped
  • 1 teaspoon Sesame Seeds
Directions
  • Step 1 Cook ramen according to package instructions.
  • Step 2 Remove ramen from heat and add fresh spinach leaves to ramen, stir until spinach is wilted, it doesn’t take long about 30 seconds. Divide cooked ramen equally into two bowls.
  • Step 3 Top ramen bowls equally with kimchi, boiled egg, chopped green onions and sesame seeds. Enjoy immediately!
