Roasted Shrimp and Cherry Tomatoes on Pesto Focaccia

This is a 3 in 1 recipe, focaccia, pesto, and put it all together and you have one incredible and tasty treat. Focaccia is a fairly simple bread to make and the best part about it is that you can top it with whatever you like.

Roasted Shrimp and Cherry Tomatoes on Pesto Focaccia

  • 1 cup Warm Water
  • 1 package (1/4 oz) active dry yeast
  • 2 tablespoons Honey
  • 1 tablespoon Kosher Salt
  • 2 tablespoons Extra Virgin Olive Oil, more for drizzling
  • 3 cups All Purpose Flour, sifted
  • 3 tablespoons Pesto, store bought or homemade
  • 1/2 pound Shrimp, peeled and deveined
  • 1 dry pint Cherry Tomatoes
  • Kosher Salt and Ground Black Pepper, for seasoning
  • 1 cup Mozzarella Cheese, grated
  • 1/2 cup Parmigiano Reggiano, grated
  • Basil, chopped for garnish
  • Step 1 In a mixing bowl or your stand mixer add the warm water, yeast, and honey mix together until yeast is combined. Let stand for 15 to 20 minutes until mixture looks foamy. Add the olive oil and the salt. Slowly start incorporating the sifted flour. {If using a stand mixer use a dough hook.} Mixture will be tacky looking. If too wet add a touch more flour.
  • Step 2 Knead dough for 10 minutes until dough is elastic. Turn dough out onto a floured surface. Knead by hand for few minutes.
  • Step 3 In a separate bowl drizzle a little olive oil in and coat the inside of the bowl. Place the dough in the bowl and roll in the olive oil to coat. Cover with plastic wrap or a towel and let rise in a warm place for 30 minutes until doubled in size.
  • Step 4 When the dough is doubled in size get a small sized 13Γ—9 sheet pan and coat the pan with olive oil. Place the dough in the middle and gently stretch the dough to fit the pan. It’s okay if it doesn’t stretch all the way. Just do your best to make it an even rectangle shape. Cover with a towel and let rise for about 20 minutes. It will rise to the point that it fills in the gapes of the sheet pan.
  • Step 5 Preheat the oven to 400 degrees F.
  • Step 6 Uncover the dough and dimple the top with your finger tips. Brush the top of the dough with pesto. Arrange shrimp and cherry tomatoes evenly on top gently pressing into the dough. Season with kosher salt and ground black pepper. Bake for 20 minutes until shrimp are pink and cooked.
  • Step 7 Preheat your broiler. Sprinkle mozzarella cheese and parmesan cheese evenly over the top of the focaccia. Broil until cheese is melted, about 2 minutes. Remove and garnish with chopped basil. Slice and serve.
