Huckleberry Sweet Rolls

Huckleberry Sweet Rolls are the best hybrid cinnamon rolls ever. I combined my love for sweet rolls and cinnamon rolls and married the two. After having an overabundance of frozen huckleberries left over from summer these just seemed necessary. The chewy dough meets the sweet huckleberries with a kiss of cinnamon, and smothered in cream cheese frosting. This could just be my favorite morning treat yet.

We had back to back weekends of family company and sweet rolls are always a fan favorite. So I’ve made this twice now for the last two Sunday’s for my house guests and they didn’t last long. They’re so simple to make, I prepped them the night before, refrigerated them to rise, and took them out in the morning to bake. That easy.

If you don’t have access to huckleberries, you could use cherries or blueberries.

Wine Pairing Recommendation: Forget that, these are amazing with coffee. Okay, or a mimosa.

Prepare these the night before and put in the fridge to rise. Take out in the morning and let come to room temperature before baking and frosting. An easy dish for company and I promise they'll vanish before your eyes.

Ingredients
  • 1 package (1/4 oz) Active Dry Yeast
  • 1/4 cup Sugar
  • 1/2 cup Milk
  • 1/2 cup Water
  • 1 whole Egg
  • 1/2 stick Unsalted Butter, melted
  • 1/2 teaspoon Salt
  • 3 1/2 cups Flour
  • 4 tablespoons Unsalted Butter, melted
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Granulated Sugar
  • 1 teaspoon Cinnamon
  • 2 cups Huckleberries
  • 1 package {4 ounces} Cream Cheese, softened to room temperature
  • 2 cups Powdered Sugar
  • 3 tablespoons Milk
Directions
  • Step 1 Preheat your oven to 350 degrees F. Spray and large casserole dish with nonstick cooking spray, set aside.
  • Step 2 In your stand mixer with a dough hook attachment or in a large mixing bowl combine the package of dry active yeast and the sugar. In a microwave safe bowl combine the milk and water, heat in the microwave for 1 minute. Pour in the mixing bowl with the sugar and yeast and mix together. Let stand for 5-10 minutes until the mixture looks foamy. Add the egg and mix to combine. Add the melted butter.
  • Step 3 While mixing, slowly begin incorporating the flour one cup at a time. The dough should start to look tacky and should pull away from the sides of the bowl. Use more or less flour for a soft, smooth looking dough. Knead dough for 10 minutes. Place the dough in a lightly oiled bowl and roll the dough in the oil to coat. Cover with plastic wrap and place in a warm place to rise for about 30 minutes or until doubled in size.
  • Step 4 Once the dough has risen. Punch down dough and place it to a floured surface. Stretch dough out to a rectangle and roll out into a 16×13 rectangle. About a 1/4″ thick.
  • Step 5 Spread the melted butter over the the surface of the dough. Whisk together the brown sugar, granulated sugar and cinnamon. Sprinkle the sugar mixture evenly over the surface of the dough. Sprinkle huckleberries over the top evenly. Start with one end and tightly roll the dough “jelly roll” style and pinch the edges to seal. Use a knife to cut the roll into 15 even slices about 1″ thick. Place the slices cut side up evenly spaced in the prepared pan. Bake on the middle rack of your oven for 35-40 minutes until the buns are golden brown.
  • Step 6 Remove and allow to cool slightly while making the frosting. Using a hand mixer or whisk, mix together cream cheese, powdered sugar and milk until smooth. Frost the rolls evenly while still warm and serve immediately.

  • These are the best things I have ever ate! I ate 3 when i pulled them out of the oven… no shame. When I usually make any kind of roll they turn out somewhat dry but these were so fluffy and good! A new family favorite for sure!
