Cheesy Waffled Hash Browns is the delicious breakfast side dish you need make. Every bite of perfectly crisp and cheesy hash browns. Make for a crowd and top with eggs and bacon for the perfect brunch.

You can use any shredded hash browns of your preference but I’m partial to Alexia’s Yukon Hash Browns. They’re so yummy and I think they make the best golden crispy hash brown.

I’m a big savory breakfast person and this dish is perfection. Easy to make and takes little time to prepare in the morning, especially on a lazy Sunday complete with mimosas. Top with eggs of your choice, bacon, parmesan cheese, any and every savory topping you can think of for breakfast. And I highly recommend you spice it up with some Sriracha. It’s not a complete breakfast without Sriracha.

 Top it the way you like it! I like it with sunny side up fried eggs, thick cut bacon, extra parmesan cheese, and garnished with chopped chives.

Cheesy Waffled Hash Browns

Serve with a sunny side up egg, some bacon, extra parmesan and a sprinkle of smoked paprika for a complete breakfast dish.

Ingredients
  • 1 bag {28 ounces} Shredded Hash Browns, thawed
  • 3 whole Eggs
  • 1/3 cup Milk
  • 1/2 cup Parmesan Cheese, plus more for garnish
  • 1/2 cup Cheddar Cheese
  • 1 tablespoon Chives, chopped
  • 1/2 teaspoon Kosher Salt and Ground Black Pepper
Directions
  • Step 1 Preheat your oven to 300 degrees F or on the warm setting.
  • Step 2 In a large bowl fold together hash browns, eggs, milk, cheese, chives and kosher salt and pepper.
  • Step 3 Preheat your waffle iron, if it has a ‘crispy outside’ setting, set it to that. Be sure to liberally spray your waffle iron with nonstick cooking spray before each batch.
  • Step 4 Use a cup measurement and work in batches, have a sheet pan handy to put the waffles in the oven to keep warm between each waffle.
  • Step 5 Evenly spread a cup of hash brown mixture in your waffle iron close and cook until waffle is crispy and browned, about 7-8 minutes depending on your waffle iron. Keep an eye on it to keep from burning. Keep waffles warm in your oven until ready to serve.
  • Step 6 Top waffles with eggs of your choice, protein of your choice, garnish with extra parmesan cheese and sprinkle with smoked paprika. Enjoy!

    REALLY? REALLY???? How utterly vain and vacuous for the two of you to pass that kind of judgment on anyone else! Neither of my parents ever liked waffles or pancakes, and for very good, compelling reasons, and they were two of the most intelligent, delightful people this world ever saw…and they weren’t considered by anyone who knew them as being “crazy” for not liking certain foods!

    You’ve lost at least one person who had intended to follow your site. I cannot stand such comments made where everyone can see them; you could have, and should have, kept all that to yourselves, and just never have put it on your site!

  • These look like just the kind of tasty savoury waffles I’m looking for! Just got two questions :O I can’t buy ‘shredded hash browns’ or any hash browns where I live. Do you think I could get the same or similar results if I grate potatoes? And do I need to bake these first?

    Second question (okay, actually third :D): Is it possible to freeze these waffles and re-heat them later on? I got really little time in the morning, so I like pull out a pair of waffles from the freezer and stick them in the iron!

    • Hi Vreni, You can absolutely grate potatoes, use russet potatoes and make sure to squeeze the water out of the grated potatoes in a clean kitchen towel before using. No need to bake them.
      I personally have not frozen these for later use but I don’t see why you couldn’t and reheat in the morning. Let me know if it works out! Cheers!
