4th of July is upon us and what better way to celebrate than with some juicy, salty, sweet and delicious grilled shrimp! I was over the moon when a package arrived from Just Jan’s spreads and jams. The assortment of beautiful handcrafted jams sent me into a cooking frenzy to come up with new recipes to showcase. This is just one recipe that came about and we’ve already made it 3 times it was so yummy! I was scrapping the jar to get every last bit of this delicious jam out for this recipe. Guess that means it’s time to order more!

The Apricot Pepper Savory Spread was the perfect pairing for the salty prosciutto. This dish has it all and more, a little spicy, sweet, and savory. Your taste buds will thank you. Make this as a side, appetizer or main course. This is a beautiful and impressive meal that will be a hit at your next dinner party, bbq or even your next date night in.

I made these on my griddle once and on my outdoor grill once, both times the shrimp came out perfect so either one works great. I love the grill when it’s just too hot to cook inside. But most of the time our San Francisco weather is cool enough to permit indoor cooking.

I balanced out the spread with a little lime juice and added water to make it more fluid for brushing. The best part about this dish is that it gets nice and caramelized on the grill and the shrimp stay perfectly cooked. Served along side a little mixed green salad and you my friend have a refreshing and tasty meal to serve up this Independence Day Weekend! Cheers!

The Apricot Pepper Savory Spread was the perfect pairing for the salty prosciutto. This dish has it all and more, a little spicy, sweet, and savory. Your taste buds will thank you. Make this as a side, appetizer or main course. This is a beautiful and impressive meal that will be a hit at your next dinner party, bbq or even your next date night in.

Ingredients
  • 1 cup Just Jan’s Apricot Pepper Spread
  • 2 tablespoons Water
  • 1 whole Lime, juiced
  • 1 pound Large Raw Shrimp, peeled and deveined
  • 1 package Thinly Sliced Prosciutto
  • Skewers soaked in water
Directions
  • Step 1 Before you start cooking make sure if you have wooden skewers to soak them in water for at least 20 minutes to avoid burning when you grill. Preheat your grill to medium high heat.
  • Step 2 Whisk together the apricot pepper spread, water and lime juice. Season the shrimp with salt and pepper. Take each prosciutto slice and slice them lengthwise into about 1 inch strips. Wrap 1 prosciutto strip around each shrimp and place 3 shrimp on each skewer, leaving a little room between each shrimp. Drizzle a little olive oil over the shrimp skewers to prevent from sticking to the grill.
  • Step 3 Place the shrimp on the grill and cook until the prosciutto is crispy and the shrimp turn opaque and are cooked through, about 3 minutes per side. When you turn the shrimp, brush the glaze on the shrimp and cook the other side. Serve immediately with side of your choice.

Lightly season the shrimp with salt and pepper. Take each prosciutto slice and slice them lengthwise into about 1 inch strips. Wrap 1 prosciutto strip around each shrimp and place 3 shrimp on each skewer, leaving a little room between each shrimp.

Drizzle a little olive oil over the shrimp skewers to prevent from sticking to the grill.

Place the shrimp on the grill and cook until the prosciutto is crispy and the shrimp turn opaque and are cooked through, about 3 minutes per side. When you turn the shrimp, brush the glaze on the shrimp and cook the other side.
