Bacon Burger with Roasted Jalapenos, Caramelized Onions and Guacamole

My ultimate Bacon Burger with Roasted Jalapenos, Caramelized Onions and Guacamole is everything I love on a burger. I don’t always make burgers at home, but when I do it has to be my kind of bacon burger.

This recipe will make 4 quarter pound patties, you could feed 4 people or you could turn this burger into a double cheeseburger like I did. Pair this with Grilled Street Corn and you have a delicious meal on your hands. A meal perfect for a backyard BBQ with family and friends.

I could give you a wine pairing recommendation for this but we’re drinking this with our favorite beer from Kona Brewing. So I suggest you eat this with your favorite brew!

Bacon Burger with Roasted Jalapenos, Caramelized Onions and Guacamole

Ingredients
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 1 whole Onion, sliced into rounds
  • 1 pinch each Kosher Salt and Freshly Ground Black Pepper
  • 6 slices Thick Cut Bacon
  • 2 whole Jalapenos
  • For the Burgers
  • 1 pound Ground Beef
  • 2 tablespoons Worcestershire Sauce
  • 1/4 teaspoon Kosher Salt and Freshly Ground Black Pepper
  • 4 slices American Cheese
  • 4 whole Brioche Buns
  • 2 whole Avocados, pitted and skin removed
  • 1 whole Lime, juiced
  • 1 bunch Cilantro, chopped
  • 1 pinch each Kosher Salt and Freshly Ground Black Pepper
Directions
  • Step 1 Preheat oven to 400 degrees F. In a medium size saute pan heat the butter and olive oil together over medium heat. Add the onions and season with kosher salt and pepper. Cook over medium heat until tender and browned, about 10 minutes. When golden brown turn heat off and set aside.
  • Step 2 Line a large baking sheet with foil. Place the thick cut bacon on one side evenly spaced apart and place the jalapenos on the other side. {You can cook them both at once on the same pan.} Place in the oven and cook for 15 – 20 minutes until bacon is crisp and jalapenos look blistered. Remove bacon to a paper towel lined plate to drain and slice roasted jalapenos. {You may remove the inner seeds if it’s too spicy, but we like the heat so we keep the seeds.} Set crisp bacon aside and jalapenos aside.
  • Step 3 Preheat your grill to 450 degrees F. In a large bowl, mix together ground beef, worcestershire sauce, and season with kosher salt and ground black pepper. Form into 6 – 8 patties and indent the center with your thumb. {Depending on how big you want your patties. I formed 4 palm sized patties.} In a medium size bowl, mix the avocado, lime juice, and cilantro together. Season with kosher salt and pepper.
  • Step 4 Place patties on your preheated grill. Grill 5 minutes per side. Once you flip the burger to grill the other side, place the buns cut side down on indirect heat of the grill. Keep an eye on the buns and pull them off as soon as they are golden and toasted. Place slices of cheese on top of the burger patties and melt. Once cheese is melted, the burgers are ready to remove and assemble.
  • Step 5 To assemble, spread the buns with guacamole, place burgers on the buns, top with bacon, caramelized onions, and sliced roasted jalapenos.
