The other day on my Dash of Savory Facebook page I asked the question, “Let’s take something ordinary like chicken salad and make it extraordinary. Any secret ingredient suggestions?” The ideas came pouring in; Cranberry sauce, cumin, cuties, jalapenos, curry, mustard, or sans mayo. All tasty ideas, I love seeing what kind of things people do with such a “run of the mill” recipe. {I particularly love the cranberry sauce idea and I’ll have to try it very soon. Yum!}
Avocado is no secret but many people don’t give it a second thought besides in their guacamole. Which is fine and good, but I decided avocado is my secret ingredient in chicken salad. {Well it’s no secret now!}
I’ve had good chicken salad in my day and I’ve had great, but this is incredible. Recently I’ve been obsessing about avocado and it took me a mere minute to realize I could definitely put it in my chicken salad recipe. Well now it has become a staple and I don’t think my boyfriend would ever let me make it without.
So to make things easy, buy your croissants and rotisserie chicken from Costco. They have the best prices and I absolutely love their croissants My boyfriend’s Mom taught me there is no other way to eat chicken salad!

Ingredients
2 whole Avocados, peeled and pitted
1 cup Mayonnaise
1 whole Lemon, juiced
1 tablespoon Dijon Mustard
1 teaspoon Garlic Salt
1 teaspoon Cracked Black Pepper
1 whole Rotisserie Chicken, cooled, skin removed and meat shredded {Buy it from Costco or roast your own!}
1 cup Red Grapes, cut in halves
1-1/2 cups Slivered Almonds {I used Almond Accents Roasted Almonds}
1 whole Avocado, pitted, peeled and diced
6 whole Croissants, cut in half {Buy from Costco!}
Preparation Instructions
In a blender or food processor add the avocado, mayonnaise, lemon juice, Dijon mustard, garlic salt, and pepper. Blend away until everything is incorporated and smooth.
In a medium bowl add the shredded chicken and the avocado mayonnaise mixture, fold together with a spatula.
Add the grapes, almonds, and diced avocado to the bowl and carefully fold into the chicken.
Pile the chicken salad high on the croissants and top with your favorite greens. {I used spinach because that’s what I had on hand.} Serve immediately. Enjoy!
Tip: Since avocado oxidizes pretty quickly and you want to store the leftovers. Store in an airtight container and squeeze a lemon over the top before storing.
