This is my first official Meatless Monday post and you’ll forget all about what meat is missing when you bite into one of these.
I’m not a meat person….I’m a carb person. So for me this isn’t a huge sacrifice. For my boyfriend, however, his whole diet revolves around meat. This is how the conversation went:
Him: “Hey babe what did you make for dinner?”
Me: “Lentil tacos…”
Him: “Oh…so what am I having?”
Me: “Lentil tacos…….”
Him: “……Can you make some bacon to go on top?”
Me: “……..”
End of story, I crisped up some bacon lardons for the un-named non meatless people in my house…
He did have one taco without the bacon and he did say it was good. But what were we to do with all this bacon?! We ate it and that was the end of my Meatless Monday idea.
Moral of the story, make what suits you best, if you don’t want bacon in these tacos, don’t do it. If you do, then rock that bacon like it’s going out of style.
It was incredibly delicious with and without the bacon…I suggest a healthy mix of both ;)
Loaded Lentil Tacos
I love lentils in the crockpot, it's easy to impart flavors like garlic when it's cooked low and slow.
Ingredients
- 1 pound Lentils, rinsed
- 4 cups Chicken Stock
- 4 cloves Garlic
- 1 pint Cherry Tomatoes
- 2 whole Avocados
- 1 whole Lime, juiced
- 1 tablespoon Cilantro, chopped
- 1/2 teaspoon Kosher Salt
- 2 whole Zucchinis, chopped
- 1 whole Bell Pepper, seeded and cut into slices
- Corn Tortillas
- Queso Fresco, for garnish
- Cilantro Leaves, for garnish
Directions
- Step 1 Add the lentils, chicken stock, garlic, and cherry tomatoes to your crock-pot. Cook on low for 4 hours until lentils are tender. Season with salt and pepper.
- Step 2 10 second guacamole, go! Pit the avocado and spoon out the green goodness into a bowl. Add the lime juice, chopped cilantro and salt. Add some pepper in there for good measure. Use a fork to mash until smooth.
- Step 3 In a medium size pan heat 2 tablespoons of olive oil over medium heat. Saute the chopped zucchini and peppers for 5 minutes until tender. Season with salt and pepper.
- Step 4 To assemble. Heat corn tortillas on the grill, on the stove or in the microwave for a few seconds just to warm and make pliable. I like to put the guacamole in the center of two tortillas to hold everything together.
- Step 5 Spoon cooked lentil mixture on the bottom of the tortilla and spoon the zuchinnis and peppers on top. Top with the queso fresco and the cilantro. Serve and enjoy your Meatless Monday.

Use a fork to mash away and BAM 10 second guacamole is born.
Nothing fancy just delicious, easy, good ol guac.
