Easy Breakfast Casserole

I’m all about this easy breakfast casserole and this is pretty much as simple as it gets. Throw together crispy bacon, sausage, eggs and cheese on top of a King’s Hawaiian Bun crust. Add in your favorite veggies like sauteed mushrooms, asparagus or tomatoes. Choose your favorite cheeses or meats. Make this your own and tailor it to the tastes of your family. This will be a savory breakfast staple in your home for years to come.

Today it’s cold, foggy and looks like it’s going to rain. I woke up early feeling like an easy breakfast was key for this Sunday. From start to finish it only took 45 minutes, I poured myself a cup of coffee and before I knew it I was relaxing on the couch enjoying the quiet time by myself. Those few moments in the morning when nobody is up and I can just relax with my coffee are my favorites.

This casserole dish makes an appearance for any family holiday get together, tailgate, friends brunch or for a day like today, just a quiet rainy Sunday. It’s the blank slate that I love; I just toss in my favorite veggies and use up the cheese that I have in the fridge {our house is in no shortage of cheese} and away it goes in the oven. Clean up is easy too!

I’m all about this easy breakfast casserole and this is pretty much as simple as it gets. Throw together crispy bacon, sausage, eggs and cheese on top of a King’s Hawaiian Bun crust. Add in your favorite veggies like sauteed mushrooms, asparagus or tomatoes. Choose your favorite cheeses or meats.

Ingredients
  • 6 slices Thick Cut Bacon, cooked and chopped
  • 1 {12 ounce} package Maple Syrup Breakfast Sausage Links, I love using Johnsonville
  • 1 12 pack King's Hawaiian Sweet Rolls, cubed
  • 8 eggs, scrambled
  • 1 cup Mexican Cheese Blend, shredded
  • 1/2 cup Part Skim Mozzarella, shredded
  • 1/2 cup Heavy Whipping Cream
  • 1 teaspoon Kosher Salt and Ground Black Pepper
  • 2 tablespoons Chopped Fresh Chives
Directions
  • Step 1 Preheat your oven to 350 degrees F.
  • Step 2 Spray a 9 inch x 13 inch casserole dish with non stick cooking spray. Cook up the bacon and sausage until crispy, dice into bite size pieces. Set Aside.
  • Step 3 Press the cubed King’s Hawaiian Sweet Rolls into the bottom of the casserole dish. In a large bowl, mix together the eggs, cheese, heavy whipping cream, salt, pepper, and chives. Fold in the bacon and the sausage. Pour everything evenly over the bread in the casserole dish.
  • Step 4 Bake for 30-35 minutes until the eggs are set and the sides look golden brown. Remove and allow to cool for a few minutes before serving.

Easy Breakfast Casserole

Serve with your favorite hot sauce, salsa or just as is.
